More Pop

With the abundance of strawberries in the market and the rhubarb stalks my mom gave me from her CSA, I decided to make strawberry rhubarb popsicles. Here's how I made them.

2 cups of rhubarb, chopped (about 3 stalks)
3 cups of cup strawberries (thickly sliced)

Combine strawberries and rhubarb in a pot, add 2 tablespoons of water. Simmer until soft (about 20 min.). Let cool.

Put in blender and add honey to taste (about a quarter cup for me). Pour into molds. Makes 6 sweet and tart pops.
